I currently work at a pre-school/day care for my day job, and I'm restricted from having anything with nuts due to work being a nut-free environment. One day I felt like having granola bars, but practically every granola bar that we had in house had nuts in it. So I decided to create my own. The original recipe was from ambitious kitchen, but I played around with it to suit my preference. I like this recipe cause it is high in protein, has a lot of crunch, and isn't overly sweet like most granola bars. The original batch I mixed the chocolate with everything else, but that melted the chocolate. So I adjusted the my recipe below so it is on the top or bottom. Enjoy! I'd love to hear how yours turned out. Photo courtesy of Ambitious Kitchen. I'll update this when I make a new batch of granola bars.
